Keto Brownies

What!!! I'm actually baking KETO brownies??!! Yes, totally inspired by a colleague to bake something healthy... Super easy recipe, just few ingredients and its only 1g net carb per pop. Low carb chocolate dessert!


Ingredients
130g unsalted butter
70g almond flour
140g Xylitol powdered erythritol 
80g cocoa powder
1/2 tsp salt
2 eggs at room temperature

Steps
Preheat oven to 180degree C. Line your pan with parchment paper.
1. In a heatproof bowl, add butter, sweetner, cocoa powder and salt. Melt over a water bath whisking constantly. Heat it up until most sweetener has melted (note that erythritol unlike xylitol, won't dissolve much at this point).
2. Remove from heat, allow mixture to cool slightly.
3. Add one egg at a time, whisking well at each time. The texture should be smooth.
(If using erythritol and batter ends up thick -  you may add an extra egg).
4. Add the almond flour in and whisk vigorously until well blended.
5. Pour into baking pan for about 15-25mins until a toothpick inserted in the center comes out moist.

Cool and serve!

Simple Brownies by Angela Seah Thulin

If you have tried my After Eight brownies, you will know how easy + yummy they are. So this time, I decided to bake this for my Mother-in-law but cut down on the sugar amount because of her sugar level intake.

Ingredients -

3 large eggs

140g room temperature butter, cut into cubes
120g sugar (I use 70g brown sugar & 50g granulated sugar)
70g plain flour
35g Lindt cocoa powder
1 tbsp vanilla essence
1/8 salt

Ganache
100g dark chocolate
about 30ml heavy cream (36% fat content)
*Optional - icing powder to dust after serving

Steps -


Preheat oven to 170 degree celsius. 


1. In your mixing bowl, sieve the plain flour and cocoa powder. Add the salt in. Add the eggs in, vanilla essence, sugar, butter - whisk altogether for 2-3mins or until well corporated. 

2. Pour onto the baking tray 7x7x1.5  >>>  You may NOW send in to bake... Its that easy! 
And bake for 20 minutes. Set it aside to cool completely.
3. Using the double boil method, melt the chocolate and then pour the heavy cream in. Stir for few seconds and you will achieve the consistency you want. Pipe or just pour on top of the brownies and you are done!

Halloween tombstone brownies by Angela Seah Thulin






I use my After Eight brownies recipe and top with chocolate ganache.


Chocolate ganache - 
80g chocolate
90ml heavy cream (36% fat content)

Using double boil method, melt the chocolate, let it cool for few minutes then add heavy cream in and stir till well mixed. Spread on brownie.

Garnish with crumbled oreos in front of each tomb.

雀巢薄荷 After Eight 巧克力布朗尼 

材料 - 
全蛋 3 粒
室温软化的牛油 140公克
细砂糖 160公克 
中筋面粉 70公克
可可粉 35公克
香草精 1大匙
盐 1/8小匙
巧克力粒 30公克
After Eight 巧克力片 16片
(可选择性 - 糖粉用以装饰)

作法
1) 以170°C 预热烤箱
2)将面粉,可可粉过筛,加入盐,蛋,香草精,糖,牛油一起拌均匀 约2-3 分钟。 加入巧克力粒拌均匀。
3)用7x7x1.5 四方烤盘,铺上烘焙纸,倒入面糊,烘焙20分钟。
4) 取出誏其降温至微热,摆上After Eight 巧克力片即可。

16 pieces after eight chocolate

Pour onto the baking tray 7x7x1.5  >>>  You may NOW send in to bake... Its that easy! 

And bake for 20 minutes. 



4. Let it cool for 10-15 mins or so. Brownie shouldn't be too hot.





5. Lay After Eight chocolates on top or if you may eat it as it is too.








Notes -
1. Every oven's temperature varies. I baked these at 160 degree celsius for 20 minutes.
