Bacon & Cheese Pork Tenderloin by Angela Seah Thulin

A simple recipe taught by my mother-in-law!

Method -

Super tender n juicy ~
Bacon & Cheese Pork Tenderloin 

Ingredients -
1 tsp oil ...
520g of pork tenderloin
7-8 slices of bacon
3 tbsp Philadelphia cream cheese (paste)
2.5 tbsp Parmesan cheese, grated
3/4 tbsp italian herbs
Ground pepper 1-2 dash
1 chicken knorr cube
150ml water
2 sprigs of fresh rosemary

Steps -
1. Mix part (B) together in a bowl becoming a paste.
2. Wash and pat dry the tenderloin and butterfly cut it.
3. Spread the part (B) mixture evenly on the tenderloin and close it.
4. Using the bacon, wrap & overlap them around the tenderloin - ensure to seal the open cut too.
5. In a non stick pan with medium heat, heat up 1tsp oil and pan roast the tenderloin evenly at all four sides. Bacon should be lightly browned.
6. Add 150ml water and 1 knorr chicken cube into the pan. Cover with lid and let it simmer in medium heat.
7. After 10mins, add 2 sprigs of rosemary and continue to simmer for another 15-20mins or until meat is done. Total timing I cook - 32mins.
